Delicious and Healthy Oil-Free Roasted Chickpeas
When you look for a tasty and healthy homemade snack recipe, what criteria makes it a “yes please” snack? For me, the recipe has to be EASY, no funky ingredients that I never use, delicious, and of course HEALTHY. If your preferences are similar to mine, then this healthy oil-free roasted chickpea recipe is exactly what you’re looking for.
With only 3 ingredients and less than 5 minutes prep time, this is just about the easiest healthy snack you could make from home. Not to mention, it’s about 5 bucks cheaper to make yourself instead of buying from the grocery store.
Aside from how easy it is to make this delicious chickpea snack, can we talk about how nutritious roasted chickpeas are for you?
My recipe uses no oil, so if you’re looking for a low fat snack these chickpeas will definitely check that box. In 1/2 cup of chickpeas, there are 135 calories, 22 carbs, 2g fat, 7g protein, and 6g fiber. If you eat plant based, chickpeas are a must-have in your diet because of their natural high protein content. In addition, the fiber will help keep you full and curb your cravings. And the best part? They are DELICIOUS. Now that you’re on board with this whole chickpea thing, let’s get cookin’!
The Recipe:
Ingredients
- 1 15-ounce (425 g) can chickpeas, drained and dried (don't rinse)
- 1 tsp sea salt
- 1 tsp seasonings of choice if desired (such as chili powder, curry powder, garlic powder, etc)
Instructions
- Preheat oven to 350 degrees F
- Drain chickpeas.
- After thoroughly drained, spread the chickpeas out on a clean, absorbent towel and gently roll and dry the chickpeas without smashing them. The skins should start coming off, simply peel them off and throw away.
- Transfer the chickpeas to a mixing bowl and add ONLY the salt. (other seasonings will be added after they are baked) Mix well.
- Bake for a total of 45-50 minutes or until golden brown and dry/crispy to the touch. Halfway through cooking, shake the pan around to rotate the chickpeas.
- Remove from oven and toss with other seasonings while they are still warm. Then let cool 5-10 minutes while they continue to crisp.
- Enjoy!
- To store, place in a baggie or container but don't completely seal. Crack the lid or if in a ziplock back leave a section unzipped. This will help them stay crispy longer. For their best consistency, consume within the first day. They will last for 4-5 days at room temperature. They freeze well for up to one month when SEALED.
