I spent under $52 for all 6 of these meals (24 servings in all.. including chicken and shrimp!) Join me as I make healthy and budget friendly dinners that will last you up to 10 days! Panko Bread Crumbs: $0.99

2 Chicken Breast – $3.31

Meal 1: Asian Chicken Wraps

ingredients:

-romain cabbage lettuce mix -flour tortillas -yakisoba noodles -slivered almonds -soy sauce -general tso’s sauce -2 cooked chicken thighs

directions:

-bake chicken thighs at 425 degrees Fahrenheit for 22-24 minutes, flipping over at the halfway point -cube chicken -mix 1/4 cup soy sauce and 1/4 cup general tso’s sauce together in a sauce pan over medium heat -marinate chicken in the sauce for 5 minutes while cooking the noodles -cook noodles according to package directions -warm tortillas in microwave in a damp paper towel for 10-15 seconds -spread out tortillas and top with lettuce mixture, chicken, noodles, and slivered almonds. Enjoy! 🙂

Meal 2: Sweet Potato Fajitas

ingredients:

-flour tortillas -2 sweet potatoes -2-3 tomatoes -1 lime -1/4 red onion -1 green pepper -cilantro -sour cream -pepperjack cheese

directions:

-slice sweet potatoes into wedges and toss with olive oil -season to taste -bake in the oven at 425 degrees Fahrenheit for 22 minutes -while those are baking, dice onion, tomatoes, slice green pepper into strips, and chop cilantro into small bits -cook onion in 2 tbsp of olive oil until translucent in color -warm tortillas in a damp paper towel in the microwave, then spread on plate -top with cooked sweet potato wedges, green pepper strips, cooked onion, diced tomatoes, cilantro, pepper jack cheese, and sour cream. Enjoy! 🙂

Meal 3: Chili Tortilla Casserole

Ingredients:

-1 can turkey chili -2 cans cream of mushroom soup -1/4 red onion -corn tortillas (6) -cheese

directions:

-strip 6 corn tortillas into 1 inch strips -mix together tortilla strips, chili, cream of mushroom soup, and diced onion -spread out in a greased 13X9 baking dish, and top with cheese -bake at 350 degrees Fahrenheit for 22 minutes

Meal 4: Onion Spinach Frittata

Ingredients:

-8 eggs -Spinach -1/2 cup red onion

directions:

-whisk 8 eggs together in a bowl. -dice onion and cook in a frying pan until translucent -add cooked onion to the bowl with egg, as well as the spinach leaves -cook in a frying pan over low heat -flip once the frittata is cooked all the way through (or mostly cooked through) -cook opposite side for 1/4 the amount of time -slice into 8 pie size slices and enjoy! 🙂

Meal 5: Hot Honey Chicken with Potatoes and Broccoli

Ingredients:

-2 LARGE chicken breast (or 4 regular sized) -sriracha -honey -smoked paprika -bbq sauce -Panko bread crumbs -sour cream -frozen broccoli (or fresh) -yukon gold potatoes (2)

Directions:

preheat oven to 425 degrees Fahrenheit -dice potatoes into bite size cubes, toss in olive oil, and season to taste -mix together 2 tbsp honey, 1 teaspoon sriracha (or more for a spicier kick), 3-4 tbsp bbq sauce (complete estimate), and 1/4 cup panic bread crumbs (also a total estimate) Mix it all together until you have a nice crumble. -put chicken breast onto a greased baking sheet and coat in sour cream -top with spicy honey crumble mixture -bake for 26 minutes with the potatoes on the top rack of your oven and the chicken on the middle rack. Take out potatoes early, around 20 minutes or so -Prepare the broccoli by steaming in a pot of boiling water or by microwaving the broccoli in 3 cups of water in a microwave safe bowl on high for 3-4 minutes. -Serve and enjoy! 🙂

Meal 6: Sriracha Shrimp, Cauliflower (or Jasmine) Rice, and Cucumber Salad

Ingredients:

-Shrimp (about a 2 pound bag) -Sriracha -Sesame seed oil -Coconut Aminos (or soy sauce) -White Wine Vinegar -Cucumber -Cauliflower Rice (or jasmine)

Directions:

for shrimp: thaw and de-tail. -mix 1 tsp sriracha, 2 tsp sesame seed oil, 2 tbsp coconut aminos, and 1 tbsp water and add mixture to shrimp in a bowl. marinate for 5 min. after marinating, cook in sauce pan until sauce thickens and bubbles. for salad: chop cucumber into bite sized pieces and dump into a bowl. Add 5 tsp white wine vinegar, 1 tsp sesame seed oil, a dash of coconut amigos, and a dash of salt and pepper. Mix. cook rice, then layer with cucumber salad and shrimp.
